A Traditional Summer Treat

I still have fond memories of my parents giving me change to buy ice cream throughout summers as a child. Every year the ice cream truck would circle through our cul-de-sac to deliver treats to a neighborhood full of kids. I think my favorites were the chocolate Good Humor ice cream bars and, of course, bomb pops. These days, however, ice cream truck sightings are rare. They’re also the talk of the town. Just not for the reason you may think.

The only ice cream truck we ever see circling the block plays Christmas music. As if that wasn’t bizarre enough, the combination of Christmas tunes in the summer paired with the distortion from a pair of way back speakers sounds pretty f-ing creepy. I swear it reminds me of that movie, Killer Clown from Outer Space. It has that same eerie level of creep factor that’s both amusing and terrifying at the same time.

There are also no bright pictures or prices for ice cream painted onto the sides of this particular truck. Therefore, my friends and I always wonder what that ice cream truck is really a front for. We’ve never actually seen anyone buy ice cream from this truck. So for all we know the person inside could be selling drugs. Or perhaps it’s a secret gateway to hell.  (I mean hey, I did grow up in the 80’s. Anything is possible!) I’ve also wondered if other towns and cities like mine have experienced the same sort of killer clown ice cream truck phenomenon.

Luckily, all of the other food trucks in our area seem to legit. It’s just that one ice cream trucks that creeps me out more than the massage parlors dotted throughout our strip malls. Those, at least, aren’t emitting eery music or maneuvering  through our neighborhoods.

These days I’m obviously no longer dependant on quarters and dimes from my parents to get my ice cream fix. However, seeing as how I’m all grown up – in number not in heart – I enjoy making my own homemade popsicles from time to time. And what better way to celebrate the arrival of spring than with your own boozy popsicles speckled with edible flowers?

Benefits of Edible Lilac Flowers

One of my favorite spring flowers are lilacs. Lilac shrubs, which typically bloom in late spring, offer more than just their beautiful blooms. This flowering shrub yields a plethora of fragrant blooms that are not only pretty to look at, they are also edible and medicinal. A beautiful touch to garnish drinks for a spring brunch, lilac blooms offer a slightly bitter, floral flavor. (Much like some of my favorite cocktails. I am after all, a gin and tonic girl with an undying love for elderflowers and juniper berries.)

Medicinally, lilacs make a lovely ingredient in facial toners due to their astringent properties. (Next time you’re thinking of making rose water, why not try lilacs instead?) A warm or cold lilac infusion also makes a nice compress for rashes, cuts and other skin ailments due to its natural astringency. As a home remedy, lilacs have often been used to bring down fevers as well as to help with gastric issues such as gas, bloating and constipation.

Boozy Popsicles: A Twist on a Summer Treat (A Season Early)

Following is a simple and easy recipe for making boozy popsicles with gin and tonic. And of course a few (or a lot!) of fresh lilac flowers thrown into the mix. Not a fan of gin? Try swapping it with your favorite organic vodka instead!

Gin and Tonic Boozy Popsicles Recipe

Ingredients:

3 cups Fever Tree tonic water
1 1/2 oz. Botanica gin (or similar)
Squeeze of fresh lime juice
Fresh lilac blossoms, to suit

Directions:

Combine all the ingredient in a small pitcher and mix to combine. Then pour the mixture into popsicles molds of your choice. Pop into the freezer, then enjoy once frozen!

For slightly sweeter boozy popsicles, try using sugared lilac blossoms instead! Or try the Fever Tree elderflower tonic water in place of regular tonic water.

You can also use pretty spoons in place of a traditional wooden popsicle stick to make your boozy popsicles the perfect addition to your spring wedding or event.

My tea soulmate.

Truth be told, this cocktail recipe came out of my desire to find a way to use up the leftover Liqueur de Violette from a long ago party and limoncello. So I took a peek at similar cocktail recipes that were already out there and gave them my own twist with two of my favorite cocktail ingredients – vodka and drinking vinegar.

While I’m a huge fan of Pok Pok Som drinking vinegar, I chose to use Vermont Village Sipping Vinegar for my Limoncello & Violette Spritzer recipe instead. Not only is Vermont Village Sipping Vinegar available in smaller quantities (and at a better price point when purchasing from Thrive Market which is how I save on natural and organic products) but they are also sugar free.

I chose to use their blueberry & honey sipping vinegar which simply contains blueberry, honey and raw apple cider vinegar. This is also the one and only EVER sipping vinegar that my roommate will drink.

While she agrees with me that this sipping vinegar is quite delicious, especially in the craft cocktails I make up in our kitchen, she will still only drink it while holding her breath so as not to smell the vinegar. With that said, I’m quite sure half of you are nodding your heads in agreement and the other half are laughing your tooshies off.

Limoncello & Violette Spritzer Recipe

Ingredients:

1 oz. vodka
.5 oz. limoncello
.5 oz. liqueur de violette
2 oz. prosecco
1 oz. Vermont Village Blueberry & Honey Sipping Vinegar
1.5 oz. club soda

Directions:

Combine all ingredients and stir. Then pour over ice into a cocktail glass and enjoy! (I’m currently crushing on these Luminarc® 9oz Lowball Glasses available at Target.)

My friend, Bambi, is brilliant at taking seemingly non-compatible ingredients and throwing them together to create some of the most amazing dinner dishes I’ve ever had. Since I’ve been staying with her I’ve had the pleasure of experiencing dishes I’d never before imagined. So I decided to start taking photos of her food dishes and writing down the recipe as she goes.

This is the first of these recipes. As it’s for chili, it’s rather simple in comparison to some of her other dishes. However, it’s pretty amazing nonetheless. I hope you enjoy Bambi’s white chicken chili recipe as much as I do!

White Chicken Chili Recipe

Ingredients:

1 – 1 1/2 lbs. chicken breast tenders
1 large yellow onion, coarsely chopped
5 cloves garlic, finely chopped
2 jalapenos, seeds removed/coarsely chopped
1 can diced tomatoes
1 ripe tomato, cubed
2 cups chicken broth
1 bunch cilantro, chopped
3 cans of beans (black, kidney, pinto, garbanzo, etc.)
1 teaspoon cumin powder
1 Tablespoon + 1 teaspoon chili powder
1 teaspoon salt
1/8 teaspoon white pepper
black pepper to taste
1 1/2 teaspoons seasoning salt
3 teaspoons dried oregano
1/3 Cup quinoa

Directions:

Begin by sauteing the chicken breast tenders in olive oil on the stove top until cooked through. Once cooked, remove the chicken from your pan and shred the chicken using a knife and fork.

How to Make White Chicken Chili

Return the chicken to the pan and stir in the garlic, onions and jalapeno. Saute the ingredients together, then add the entire contents of the pan to a large pot.

Add fresh and canned tomatoes, chicken broth, cilantro and beans to the pot with the chicken. We used a combination of beans so be sure to choose your favorites. (Bambi likes to add a can of garbanzo beans to her chili for extra texture.)

Now add the cumin powder, chili powder, salt, pepper, seasoning salt and oregano. Stir the ingredients into the pot of chili and allow to simmer for ten minutes.

Finally, add the quinoa to the pot of chili both for added texture and to soak up the excess liquid. Allow to simmer an additional 30-40 minutes and your white chicken chili is ready to eat!

Adapted by my friend, Bambi, from the giant ginger cookies recipe found in Better Homes and Gardens Test Kitchen Favorites, this molasses cookies recipe does it right with extra spices to warm your stomach and heart.

Homemade Molasses Cookies Recipe

Yields about 24 molasses cookies.

Ingredients:

2 1/4 cups all purpose flour
4 teaspoons ground ginger
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1 teaspoon ground cloves
1/8 teaspoon sea salt
3/4 cup butter flavored shortening
3/4 cup white granulated sugar
1 1/4 cup brown sugar
1 1/2 teaspoons vanilla extract
1 egg
1/4 cup blackstrap molasses
2 tablespoons regular or coarse sugar

Directions:

Combine the flour, ginger, baking soda, cinnamon, cloves and salt in a medium bowl. Set aside.

In large mixing bowl beat the shortening with an electric mixer on low for 30 seconds. Then slowly add 3/4 cup granulated sugar and the brown sugar, beating until fluffy. Add the egg, vanilla extract and molasses and beat well. Then stir the flour mixture into the egg mixture.

Shape the molasses cookie dough into 1 1/2-inch balls using a heaping tablespoon of dough for each ball. Then roll the balls in the two tablespoons of sugar and place onto ungreased cookie sheets about 2 1/2 inches apart.

Bake at 350°F in a preheated oven for about 10 minutes, taking care not to overbake. (They should still be puffed after baking.) Then let stand on the cookie sheets for 2 minutes before transferring to a wire rack. Allow to cool.
