Green Salad Recipe with Avocado + Pistachios

Ingredients:

3 scallions
1 small cucumber
1 green pear
2 stalks celery
1 avocado
1/4 cup pistachios
1/4 cup fresh basil
1 cup shelled edamame beans
juice of 1-2 limes
2 Tablespoons olive oil
salt and pepper to taste

Directions:

Chop the scallions, cucumber, pear, celery, avocado, pistachios and basil and combine in a large bowl.

Mix in the edamame bean then dress the salad with the juice from the lime(s), olive oil and salt and pepper to taste.

Enjoy! Leftovers will keep in the refrigerator until the next day.

A side note on this one. This green salad recipe is absolutely divine as is. However, I would use 1/2 cup of pistachios the next time around to ensure I get a pistachio in every bite as the nuts add a fantastic flavor zing to this dish.

Party Pleasers: A light Rooibos Peach Tea Rum Punch Recipe favorite and a crowd pleasing Black Bean Dip Recipe!

Over the weekend I hosted an amazing, super fun cocktail & cookout party filled with (now) proven party pleasers. I went all out for this party and included a selfie spot with props – this was not a thing twenty years ago – and in addition to make your own cocktail stations, I also included two pre-made spiked punches.

You must try this delicious Black Bean Dip Recipe for your next party! It's so simple to make. Just mix it all together the night before, refrigerate overnight and serve the next day!

There was also smoked pork butt, brisket and lamb along with grilled veggies and homemade dessert selections. I also made my fantastic black bean dip for pre-dinner snacking.

For the smoked meats we offered a BBQ sauce bar with four sauce and a crazy hot pepper vinegar. I also set out pink Himalayan salt in a dish and black peppercorns for extra seasoning.

I purchased my alcohol for this party from Mouth.com as they offered cocktail kits with recipes. This made the entire process of planning the cocktail menu a lot easier.

Their Au Pear Cocktail Kit was a huge hit. Made with Square One Botanical Vodka and George Spiced Pear Liqueur, this was also the most complex cocktail recipe. Fortunately we had someone dive right in with this one from the start so no one was intimidated by the process. You can find the recipe for the Au Pear Cocktail at Mouth here.

Rooibos Peach Tea Rum Punch Recipe! This spiked punch cocktail recipe is a real party pleaser and is made with a combination of light and dark rum as well as Adagio's Rooibos Peach Tea! It tastes exactly like peach tea!

My own Rooibos Peach Tea Rum Punch Recipe was also a party pleaser. Made with a combination of light and dark rum as well as Adagio’s Rooibos Peach Tea, this drink offered lighter alcohol content and tasted exactly like summer peach tea!

It didn’t end there though. In addition to a blow up selfie frame, we also had a battle ax which turned out to be brilliant for creating memorable photos.

And of course everyone went home with fun party favor bags filled with handmade donut soaps, handmade solid donut salt scrubs, illustrated temporary tattoos and artisan lollipops.

Recipes for Party Pleasers

So, are you ready to make your own party pleasers? You’ll find my recipes for my black bean dip and Rooibos peach tea rum punch below.

Rooibos Peach Tea Rum Punch Recipe! This spiked punch cocktail recipe is a real party pleaser and is made with a combination of light and dark rum as well as Adagio's Rooibos Peach Tea! It tastes exactly like peach tea!

Rooibos Peach Tea Rum Punch Recipe

Ingredients:

64 oz. water
4 Tablespoons Adagio Rooibos Peach Tea
1 1/2 Cups light (clear) rum
1/2 Cup dark or special rum
1/2 Cup simple syrup
2-3 ripe peaches

Directions:

To make this Rooibos Peach Tea Rum Punch Recipe you’ll first need to wash and dry the peaches. Once clean, cut the peaches in half and remove the seed. Then cut the peaches into wedges. Place the peaches in a large heat safe pot or container. (I used a large 8 cup glass Pyrex measuring cup as it has a spout.)

Then fill 1-2 paper tea filters with 4 Tablespoons of tea. (You can put all 4 Tbs into one tea bag or split it into two tea bags as desired.) Place the tea bags into the container with the peaches.

In a large container or an electric kettle, bring half the amount of water needed to a boil.

Once the water boils, remove from heat and pour over the tea bags and peaches.

Steep the tea for 5 minutes, then remove the tea bags from the container, squeezing them to remove the excess tea from the bags.

Measure out the simple syrup and stir into the hot tea.

Now measure out and the rums and the remaining water and combine in a separate gallon sized container.

Pour the hot tea into the rum/water mixture and mix well.

Cover and refrigerate until use.

You can remove the softened peaches if desired for another dish or leave them in the tea for visual interest.

To drink, simply pour the Rooibos peach tea rum punch over ice and enjoy.

Party Pleasing Black Bean Dip Recipe

Ingredients:

2 cans Bush’s black beans, drained
1 can shoe peg corn
1 cup Pace Chunky Mild Salsa
1 red pepper, chopped
1/4 cup green onions, chopped
1/2 cup lemon juice
1/4 cup olive oil
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon cumin powder
2 bags of Tostitos Scoops or tortilla chips

Directions:

Drain the cans of black beans and corn. Combine the beans and corn in a large container with washed/dried/chopped peppers and onions, salsa, lemon juice, olive oil and spices. Mix well, then cover and refrigerate overnight.

Remix the black bean dip before serving, then serve with tortilla chips.

Blue Cheese and Bacon Arugula Salad Recipe

This homemade blue cheese and bacon arugula salad recipe is one of my favorites! I can literally eat this salad for lunch every day of the week without tiring of it. It’s basically a spin off a blueberry and bacon arugula salad recipe at one of my favorite restaurants. However, as I am unable to find a blueberry vinaigrette anywhere and am not talented enough in the food department to make my own, I used a raspberry vinaigrette instead.

This recipe is also great with a mix of power greens – and I do eat it both ways depending what’s on sale – but I love the mustard like taste of baby arugula without any other greens or lettuces.

Homemade Blue Cheese and Bacon Arugula Salad Recipe

To create this Blue Cheese and Bacon Arugula Salad Recipe simply fill a bowl with organic baby arugula and top with real bacon bits – preferably you’ve made them yourself – blue cheese, and just enough raspberry vinaigrette to lightly coat all of the arugula. I typically combine the ingredients in a plastic bowl with a lid and shake to coat. Remember less is more when adding the vinaigrette. Depending on the size of your salad you’ll likely only need one to two tablespoons of vinaigrette.

Now that your salad is made, enjoy!

Ginger Lemongrass Martini Cocktail Recipe

While the fourth of July has come and gone, it did inspire me to try a new vodka. I’ve been on a huge gin kick lately but after seeing the Spud Ginger Lemongrass Vodka at the ABC store I just couldn’t resist. A fifth of this flavored potato vodka was a reasonable $20 and it’s distilled five times so I decide why not. In the end I was pretty pleased with this vodka though I wish they had more recipes on the Spud Vodka website for this one as I’m not a great mixologist. I generally go out for my drinks but I did really enjoy the one Spudtini recipe they had.

The original recipe for this martini cocktail recipe called for honey syrup. However, I had no idea what honey syrup is or where to find it so I subbed this ingredient for some mighty delicious agave syrup instead. I hope you like this one. I know I did. And please, if you have other ideas for this awesome vodka, share them so I have more reasons to keep it in the freezer on a more regular basis. I’m kind of also wanting to try their pumpkin spice vodka come fall as well for a grown up Halloween treat.

Ginger Lemongrass Martini Cocktail Recipe

The Ginger Lemongrass Spudtini Martini Recipe

Adapted slightly from Spud Vodka’s Spudtini Recipe

Ingredients:

2 oz. Spud Ginger Lemongrass Vodka
1 oz. lemon juice
.5 oz. Madhava Light Agave Nectar (or other light agave syrup)
1 egg white
dash Angostura Aromatic Cocktail Bitters

Directions:

Combine all ingredients but the bitters in a cocktail shaker with ice and shake vigorously. Pour into a martini glass, add a dash of bitters and stir. If you’re using a whiskey glass simply double the recipe.
