Chili is a traditional winter favorite. It not only makes a hearty meal, but it’s perfect for those cold winter days. While I’ve recently gone pescatarian for purely selfish reasons — I plan to live forever! and it’s heart healthy — I am still able to enjoy chili through my collection of favorite vegetarian chili recipes. I make my healthy chili seasoning mix recipe using certified organic spices from Mountain Rose Herbs. So I know that I’m always starting with quality ingredients for my homemade chili spice blend. Healthy Chili Seasoning Mix Recipe

Yield: About 1/4 Cup

Ingredients:

1.5 Tablespoons cumin seed powder
1 Tablespoon cayenne powder
½ Tablespoon Ancho chili powder, red roasted chili powder or smoked paprika powder
1 Tablespoon garlic powder
¼ teaspoon ground black peppercorn
1 teaspoon Himalayan pink salt, optional
½ teaspoon dried oregano leaf

Directions:

Measure out the ingredients called for in my recipe for the chili seasoning mix, then combine in small bowl or zipper bag. Mix well or shake to combine, until all of the ingredients are evenly incorporated throughout the chili spice mix.

Shelf Life of Your Chili Spice Mix:

For best results, use your chili spice mix within a month, while it’s still at its peak freshness. After this time, the ground spices you used in your recipe will start to lose some of their natural flavor and aroma. While not as potent as when first made, your chili seasoning mix is still good after the one month mark. Ground spices typically have a shelf life of 2-3 years, while seasoning blends have a shelf life of 1-2 years.

A healthy chili seasoning mix recipe. By making your own chili spice mix, you can create a healthier alternative to store bought chili seasoning mixes. This chili spice mix recipe is free of MSG & other unwanted ingredients as well as excess salt.

Ingredients

  • 1.5 Tablespoons cumin seed powder
  • 1 Tablespoon cayenne powder
  • ½ Tablespoon Ancho chili powder, red roasted chili powder or smoked paprika powder
  • 1 Tablespoon garlic powder
  • ¼ teaspoon ground black peppercorn
  • 1 teaspoon Himalayan pink salt, optional
  • ½ teaspoon dried oregano leaf

Instructions

Measure out the spices using measuring spoons, omitting the salt if desired for lower sodium.

Combine in a zipper bag and shake well to combine.

Store your chili seasoning mix in an airtight container between uses, in a cool, dark location.

Notes

Best when used within one month for maximum freshness. However, the shelf life of this chili spice mix is 1-2 years.

Let’s Taco About Cooking

I’ll admit I’m not the best cook. I learned the basics (my mom taught me to bake, not cook) during my first marriage. I was going through an unfortunate bought of agoraphobia at the time. So I cooked meals from scratch, both from Martha Stewart’s Everyday Food Magazine and recipes from the internet. My biggest success was surprisingly making pierogies from scratch. It took an hour and half to make, and I needed help flattening out the pasta, but damn. It was totally worth it. (At least once anyway.)

I made all my mashed potatoes like pierogi guts after that. Flavored with sauteed onions, garlic, sour cream and cheddar cheese. However, that was the one and only time, I ever tried making pasta. I vowed, that until I owned a pasta machine, it was entirely too much manual labor. (Not to mention the total time suck.)

Since then I’ve experimented with cooking primarily through meal delivery kits, such as Hello Fresh. While it’s not a realistic service for my budget every week, it does make a nice treat from time to time. I get to cook a dinner I know I can’t screw up. And I’ve actually learned some things along the way. Cooking tips and tricks that I’ve since incorporated into meals I actually made without a recipe.

Of course, meat is expensive, especially steak. So I recently tried a meatless Monday for dinner. It did not going over so well with Greg. After a ten hour day of manual labor, it just didn’t fill him up despite the high iron and protein content in farro and quinoa.

While in Kroger one day, I happened upon some flank steak. For the price it was ridiculously cheap compared to a ribeye or a filet. So I picked up close to 2 lb. (two meals for two people) for around $17.

Up to that point, I hadn’t cooked flank steak in over a decade. It’s often not available or I’m not the one cooking. So any meat selection, aside of an organic grass fed sirloin, I leave to the chef (ie. someone other than myself.) I was readily impressed, however, both with the flavor and tenderness of the cuts of flank steak. So I’ve purchased it a few times since then.

This latest go round I decided to make tacos with something other than ground beef. I combined a number of taco recipes I’ve tried over the years, including ones with shrimp, for this flank steak tacos recipe. In the end, I was pretty impressed with how my “winging it” turned out. Therefore I thought I’d share my flank steak tacos recipe with you, my readers, so you can enjoy it on your next taco Tuesday dinner night.

Flank Steak Tacos Recipe with Avocado Crema

Serves 4-6.

Ingredients:

About 3/4 – 1 lb. flank steak
corn or flour tortillas
1 zucchini, chopped
1 sweet yellow onion, chopped
1 8 oz. package sliced baby bella mushrooms
salt and pepper, to taste
olive oil, as needed

Avocado Crema for Taco Topping

1 large avocado
1/3 Cup sour cream
1/3 Cup fresh cilantro, finely chopped
3 Tablespoons lime juice
salt, to taste

Chili Lime Seasoning for Flank Steak Tacos

2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon Himalayan pink salt
1/2 teaspoon fresh ground pepper
3 cloves garlic, finely chopped
2 Tablespoons lime juice

Directions for Making Flank Steak Tacos:

Begin by making the chili lime seasoning for this flank steak tacos recipe. To do this, measure out the spices and combine in a bowl with the the chopped garlic and lime juice.

Make delicious homemade steak tacos for family weeknight dinners with this tasty and delicious flank steak tacos recipe that you'll want to make every taco Tuesday! This chili lime taco seasoning is a blend of chili powder, cumin, oregano, salt and pepper, garlic and lime.

Then rub the seasoning on both sides of the flank steak. Set aside.

Next prepare your vegetables. Heat a Tablespoon of olive oil in a pan over medium-high heat. Add the mushrooms and saute, mixing occasionally.

Taco night is a great way to use up extra zucchini from the garden. Learn how with this easy homemade flank steak tacos recipe and make something delicious for dinner!

Once the mushrooms are halfway cooked, add the zucchini and onion. (You can also add additional olive oil at this time if needed.) Once tender, add salt and pepper to taste, then transfer the vegetables to a bowl and cover.

This easy avocado crema recipe is the perfect topping for your taco Tuesday weeknight dinners. All you need is an avocado, sour cream, cilantro, lime juice and a dash of salt.

While the vegetables are cooking prepare the avocado crema. To do this, mash the avocado in with the sour cream, lime juice and chopped cilantro until creamy. Season with salt to taste, then set aside.

Once the veggies are done cooking, add the flank steak to a pan with olive oil over medium high heat. Cook for 3 minutes on each side for a rare steak. Longer for medium-rare to medium.

Greg actually prefers his steak more medium than rare. So after slicing the cooked flank steak against the grain, I threw the steak back into the pan for 2-3 more minutes to suit his taste.

While the steak rest prepare the taco shells. I used yellow corn taco shells for my flank steak tacos recipe.

To warm, heat olive oil in a pan over medium-high heat then add shells to the hot pan. Turn the shells frequently until warm and soft, and slightly charred in places.

  • 1 8 oz. package sliced baby bella mushrooms
  • salt and pepper, to taste
  • olive oil, as needed
  • 1 large avocado
  • 1/3 Cup sour cream
  • 1/3 Cup fresh cilantro, finely chopped
  • 3 Tablespoons lime juice
  • salt, to taste
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon Himalayan pink salt
  • 1/2 teaspoon fresh ground pepper
  • 3 cloves garlic, finely chopped
  • 2 Tablespoons lime juice

Instructions

  1. Make the chili lime seasoning for this flank steak tacos recipe. Measure out the chili powder, cumin, oregano, salt and pepper. Combine in a bowl with the chopped garlic and lime juice.
  2. Rub the seasoning on both sides of the flank steak. Set aside.
  3. Prep the vegetables. Heat a Tablespoon of olive oil in a pan over medium-high heat. Add the mushrooms and saute, mixing occasionally.
  4. Once the mushrooms are halfway cooked, add the zucchini and onion. Once tender, add salt and pepper to taste. Set vegetables aside.
  5. Prepare the avocado crema. Mash the avocado in with sour cream, lime juice and chopped cilantro until creamy. Season with salt to taste. Set aside.
  6. Add the flank steak to a pan with olive oil over medium high heat. Cook for 3 minutes on each side for a rare steak. Longer for medium-rare to medium. Let rest then cut steak against the grain.
  7. Prepare the taco shells. To warm, heat olive oil in a pan over medium-high heat then add shells to the hot pan. Turn the shells frequently until warm and soft, and slightly charred in places.
  8. Assemble the flank steak tacos with the cooked steak, veggies and avocado crema. Add a squeeze of lime juice if desired.

My friend, Bambi, is brilliant at taking seemingly non-compatible ingredients and throwing them together to create some of the most amazing dinner dishes I’ve ever had. Since I’ve been staying with her I’ve had the pleasure of experiencing dishes I’d never before imagined. So I decided to start taking photos of her food dishes and writing down the recipe as she goes.

This is the first of these recipes. As it’s for chili, it’s rather simple in comparison to some of her other dishes. However, it’s pretty amazing nonetheless. I hope you enjoy Bambi’s white chicken chili recipe as much as I do!

White Chicken Chili Recipe

Ingredients:

1 – 1 1/2 lbs. chicken breast tenders
1 large yellow onion, coarsely chopped
5 cloves garlic, finely chopped
2 jalapenos, seeds removed/coarsely chopped
1 can diced tomatoes
1 ripe tomato, cubed
2 cups chicken broth
1 bunch cilantro, chopped
3 cans of beans (black, kidney, pinto, garbanzo, etc.)
1 teaspoon cumin powder
1 Tablespoon + 1 teaspoon chili powder
1 teaspoon salt
1/8 teaspoon white pepper
black pepper to taste
1 1/2 teaspoons seasoning salt
3 teaspoons dried oregano
1/3 Cup quinoa

Directions:

Begin by sauteing the chicken breast tenders in olive oil on the stove top until cooked through. Once cooked, remove the chicken from your pan and shred the chicken using a knife and fork.

How to Make White Chicken Chili

Return the chicken to the pan and stir in the garlic, onions and jalapeno. Saute the ingredients together, then add the entire contents of the pan to a large pot.

Add fresh and canned tomatoes, chicken broth, cilantro and beans to the pot with the chicken. We used a combination of beans so be sure to choose your favorites. (Bambi likes to add a can of garbanzo beans to her chili for extra texture.)

Now add the cumin powder, chili powder, salt, pepper, seasoning salt and oregano. Stir the ingredients into the pot of chili and allow to simmer for ten minutes.

Finally, add the quinoa to the pot of chili both for added texture and to soak up the excess liquid. Allow to simmer an additional 30-40 minutes and your white chicken chili is ready to eat!

Green Salad Recipe with Avocado + Pistachios

Ingredients:

3 scallions
1 small cucumber
1 green pear
2 stalks celery
1 avocado
1/4 cup pistachios
1/4 cup fresh basil
1 cup shelled edamame beans
juice of 1-2 limes
2 Tablespoons olive oil
salt and pepper to taste

Directions:

Chop the scallions, cucumber, pear, celery, avocado, pistachios and basil and combine in a large bowl.

Mix in the edamame bean then dress the salad with the juice from the lime(s), olive oil and salt and pepper to taste.

Enjoy! Leftovers will keep in the refrigerator until the next day.

A side note on this one. This green salad recipe is absolutely divine as is. However, I would use 1/2 cup of pistachios the next time around to ensure I get a pistachio in every bite as the nuts add a fantastic flavor zing to this dish.
