Popsicles are a summer staple. I remember on hot days, my mom would have popsicles for my brother and me and usually a few kids from the neighborhood when the ice cream truck visited our street. They were a great way to cool off in the heat of summer.
Even though I’m an adult now and my son is grown, I’m still partial to a good fruit popsicles recipe on hot days. They are refreshing and make a great dessert or snack. Instead of buying pops at the store that are full of sugar and artificial flavors and colors, I make my own homemade popsicles.
These watermelon kiwi popsicles are really easy to make, too. They do have three steps to make them, but you can take your time making them. I just keep my blender out and rinse it between steps, so it really doesn’t take much time to make watermelon ice pops.
While you could just make these watermelon popsicles all one color and they would be refreshing and delicious, I like the layered look. The pink is watermelon, the white rind is creamy coconut and the green layer is kiwi. I also added some chocolate chips to look like watermelon seeds.

- Similar to a mini muffin tin, use ice cube trays to make smaller sugar free popsicles.

Homemade popsicles can be hard to unmold. I have better luck with silicone molds than hard plastic molds. Make sure you let these watermelon kiwi popsicles get fully frozen. I recommend leaving them in the freezer overnight.
You can set the watermelon popsicles on the counter and let them thaw for 5 minutes and try to remove them from the mold. You can also rub the mold under warm water for a few seconds to loosen the homemade popsicles.
Tips for Making Healthy Watermelon Popsicles
These watermelon coconut milk popsicles are fairly simple to make, but here are some tips for making them:
- Invest in a silicone popsicle mold or two. You can make homemade popsicles and store them in the freezer after they are set up, so you can reuse the mold quickly after you make the pops. It’s worth it to have one or two good molds.
- The riper the fruit, the sweeter your fruit popsicles will be. Taste the mixture before adding any sweetener.
- Let the watermelon kiwi popsicles freeze fully between layers.
- Use cold ingredients so your fruit pops set up quicker.
- Water freezes harder than cream, so the coconut milk or yogurt won’t get as hard. While you can add coconut milk or yogurt to the watermelon layer, I recommend just using it for the white layer.

To make these watermelon popsicles with chocolate seeds, you will need the following ingredients:
- Seedless watermelon
- Coconut milk
- Lemon juice
- Kiwi
- Chocolate chips or carob chips
- Stevia
How to Make Watermelon Popsicles With Fresh Fruit
To make these watermelon coconut milk popsicles, follow these steps:
1. Cut a lemon in half, then into quarters. Squeeze to juice the lemon, then set two Tablespoons of lemon juice aside.
2. Cut the watermelon into quarters. Remove the seeds, then cut into chunks. Place the watermelon in a blender with 2 teaspoons of stevia and the reserved lemon juice. Blend the watermelon mixture until pureed. (You can expect the blended watermelon to be foamy.)
3. Pour the watermelon puree into 10 of the popsicle molds, filling each so they are about ⅔ of the way full. Then add chocolate chips to each mold. Use a spoon to gently push the chocolate chips down to create faux watermelon seeds for these healthy fruit pops.
4. Now place the lid on the popsicle mold. Insert the popsicle sticks into each of the cavities of your mold. Then freeze for 2 to 3 hours, or until the homemade popsicles are firm.
5. Once the watermelon layer of your fruit pops have frozen, whisk the coconut milk and 1 teaspoon of stevia together in a bowl. Then remove the fruit popsicles from the freezer.
6. Pour the blended coconut milk evenly into each popsicle mold on top of the frozen watermelon ice pop layer. You’ll add about 4 teaspoons to each pop. Then freeze the homemade popsicles for an additional hour.
7. Prepare the final layer for your ice pops while the second layer sets up. To do this, peel the kiwi. Then blend the fruit in a blender until it is pureed.
8. Finally, remove the popsicles from the freezer and pour the kiwi layer on top of the frozen coconut milk. Divide it evenly between all of the fruit pops. Then freeze your homemade fruit pops for another hour.
10. Once frozen, you are ready to unmold and eat your healthy frozen treats! To unmold your healthy watermelon popsicles, run the mold under warm water for 15 to 20 seconds. Then gently pull on the stick to unmold. If they don’t release, run under water for several additional seconds.
How to Store Homemade Watermelon Popsicles With Kiwi
You can remove all of the watermelon coconut milk popsicles from the mold and store in a freezer bag. They will not stick together. They can be frozen for up to three months.
Watermelon Kiwi Popsicles with Coconut Milk
Make these watermelon kiwi popsicles coconut milk. These healthy fruit pops are easy to make at home as a delicious summer treat.
Ingredients
- 3 1/2 Cups Seedless watermelon
- 1 Cup Coconut milk
- 2 Tablespoons Lemon juice
- 6 medium size Kiwis
- 1 Tablespoon Chocolate chips
- 3 Teaspoons Stevia
Instructions
- Squeeze a lemon to extract the juice and set aside.
- After you remove seeds from the watermelon, blend it and add 2 teaspoons of stevia and the lemon juice. Blend until pureed. It will be foamy.
- Pour it into 10 of the popsicle molds and fill about ⅔ full. Then add chocolate chips to each mold and use a spoon to gently push the chocolate chips down to create faux seeds.
- Place the lid on the popsicle mold and add the popsicle sticks. Freeze for 2 to 3 hours or until firm.
- After a few hours, whisk the coconut milk and 1 teaspoon of stevia.
- Remove the popsicles from the freezer and divide the creamy coconut layer evenly between each mold. You’ll add about 4 teaspoons to each pop. Freeze for another hour.
- Prepare the final layer. Peel the kiwi and blend in a blender until pureed.
- Remove the popsicles from the freezer and pour the kiwi layer on top. Divide it evenly between all of the fruit pops. Freeze for another hour.
- To unmold your healthy watermelon popsicles, run the mold under warm water for 15 to 20 seconds. Gently pull on the stick to unmold. If they don’t release, run under water for a few more seconds.
