Made with just four simple ingredients, this homemade cornbread recipe is, and has been, a favorite year after year. Combine Jiffy Corn Muffin Mix with a bit of creamed corn, and egg and sugar and you have a bread based side dish that tastes like cake! A super moist cornbread recipe that your family – kids included! – will absolutely LOVE!
I’ll admit this isn’t my original recipe. I actually discovered this brilliant food hack from my son’s biological father. He’d worked in a restaurant on and off in early adulthood. So he’d picked up a few cooking tips and tricks here and there. And I’m glad he did! If you hate dry, crumbly cornbread, then this recipe hack using Jiffy Corn Muffin Mix is a must for your next chili dinner.

Favorite Kid-Friendly Cornbread Recipe
Ingredients:
1 box of Jiffy Corn Muffin Mix
3/4 can of creamed corn
1 egg
1/4 cup sugar
Directions:
Mix together all of ingredients – you’ll be omitting the milk it says you need on the back of the box – and bake in the oven according to the instructions on the box.
Then simply serve and enjoy!
Kid-Friendly Cornbread Recipe
My favorite 4-ingredient cornbread recipe for a cake like kid-friendly cornbread that will have you and your family coming back for seconds!
Ingredients
- 1 box of Jiffy Corn Muffin Mix
- 3/4 can of creamed corn
- 1 egg
- 1/4 cup sugar
Instructions
- Mix the ingredients together, omitting the milk called for on the back of the Jiffy Corn Muffin Mix box.
- Allow the mixture to set for four minutes.
- Fill muffin cups so they are about 2/3 of the way full.
- Bake the cornbread muffins for 15-20 minutes, or until the tops are golden brown.
